Wake to the Cake
Sometimes it is good to wake up and enjoy a cake – a pancake that is! There’s nothing that says “weekend” like the indulgence of pancakes. And if they are made for you without you knowing, they taste even sweeter.
I got back from a vigorous class at the gym and besides having my handsome boyfriend and his 2 cute kids to greet me, I was presented with a plate of “silver dollar” round warm toasty cakes with sliced banana and a touch of syrup. Knowing we are all going to hit the boardwalk running – literally – allowed me to enjoy such a treat.
You can buy the batter already made or make it from scratch or from a boxed mix. You can go the healthy route and use a low-fat or whole-grain version. And either try a lite syrup or use some honey, honey. If you add a few semi-sweet or dark chocolate chips, or some fresh strawberries or blueberries, you’ve created a luscious luxury.

May 18, 2010 at 2:56pHi Annette! I just came across your blog and wanted to say hello! Not sure if you remember me, but we met long ago at some party or other with Erica Okone and/or Mike Carrol.
Looks like you’re doing well and having fun. Glad to hear it. Moved from NY to a little colonial in a beautiful woodsy area of CT 2 years ago with my husband and am enjoying the peace and quiet.
Let me know if you’re ever in CT. It would be nice to catch up. I’m also on FB.
Looking forward to your next recipe.
Take care of yourself!

May 18, 2010 at 2:56pHey Madeleine!
Of course I remember you. How nice to hear from you!! We had some fun times. Where in CT are you? How nice for you to be up there in the peace.
This blog is new for me – how did you come across it? We haven’t “launched” it officially quite yet – the KitchAnnette concept is to share foods and stuff while we develop some products to promote. My partner Joe and I are also compiling a fun cookbook – we are cooking up a lot of treats figuratively and literally – haha!
I am on FB too – I will find you! 🙂 What a nice surprise.
