Papaya – Oh My-ahhhhhh!

kapapayalimeIt is not quite summer however the temps in NYC won’t read the calendar so we’re having full out August humidity today! I’m not a big fan – but I want a BIG FAN to keep me cool! Ha!

Here’s a “cool” go-to way to start the day – fresh papaya! Cut it in half longwise, spoon out the seeds – it’s a happy canoe! Sprinkle with a touch of sea salt, cracked black pepper, and squeeze the juice of a fresh lime on each half.

Papaya is so good for you – it has a low sugar content, is low in calories, and contains fiber, Vitamins C & E, and antioxidants. Lime also has a boost of Vitamin C, beneficial enzymes, and antioxidants. Feel free to spice it up! A little cayenne pepper would be a great addition.

Create a salsa with tomatoes, cilantro, red onion, and fresh jalapeño pepper and serve it with fresh grilled fish or chicken. Throw it in a smoothie! Muddle it in a cocktail with rum and a bit of simple sugar… the possibilities go on and on!

Yum!
