Latkes – Potato Pancakes!

We’re in the midst of Passover and I wanted to honor it with Latkes!! This recipe was shared with me by Roz Mogolowitz and I got some help with it from Jeanne Koss, two women who are special to me. When you share a family recipe, you’re literally feeding love to people and I am now passing their love on to you!

I had so much fun making these festive potato pancakes. Maybe anything that is a pancake is inherently fun! Ha!!

Here’s how:

IMG_9341INGREDIENTS:
• 2 lbs potato
• 1 medium onion
• 2 large eggs
• 1 cup matzo meal
• salt & pepper to taste
• 1 cup canola or vegetable oil

DIRECTIONS:
1) Peel potatoes. Grate or shred them. You can also use a blender or food processor if you like.
2) Grate or shred the onions.
3) Place the potatoes and onions in a bowl and mix.
4) Add the eggs and blend well.
IMG_06155) Add about 1/2 the matzo meal to start, with salt & pepper to taste. The mixture needs to be thick enough so it won’t fall apart when frying so add more matzo meal as needed.
6) In a large skillet, add about an inch of oil, which should be about a cup depending on your skillet. Heat the oil until it sizzles when tested. Using a tablespoon, carefully place the mixture into the hot oil and cook until brown on one side, then turn to brown the other side. Place latkes on paper towel to absorb excess oil. Serve hot.

They’re delicious with applesauce or sour cream… or both! I also like them with plain Greek yogurt. You can add spices and herbs to make it a custom dip too. How about topping with a bit of brisket then a little dollop of toppings! Ohhhh… that’s a yummy bite! Yeah!
