Dessert Oscar Menu 2013: S’Amours – Version À Deux
You will adore these S’Amours – Version À Deux, Annette’s take on the s’more for our homage to Amour.
Ingredients: 3/4 cup butter, 1/2 cup brown sugar, 3/4 cup sugar, 1 tsp. cinnamon, 1/4 cup honey, 1 pinch salt, 1 1/2 tsp baking powder, 1/2 tsp. baking soda, 1 tsp. vanilla extract, 1 egg, 2 1/4 cups flour, 12 oz. dark chocolate chips, 8 oz. mini marshmallows
Directions: Preheat oven to 375°. In a large bowl, add butter, sugar, and brown sugar. Start to mix until well blended. As it mixes, add in cinnamon, honey, salt, baking powder, baking soda, vanilla, and egg. Add flour and mix until well blended. If it’s not stiff enough to roll out, let cool in the fridge 10-20 minutes.
Use a little flour to sprinkle where you’ll roll out the dough and roll it to about 1/4″ thick. Using a heart-shaped cookie cutter, press to make hearts and place on a parchment paper lined cookie sheet. Gather the remaining dough, re-roll, and cut more hearts until you’ve run out. Bake for about 8-9 minutes. Let cool.
Now it’s time to assemble you’re S’Amour. In a bowl, add 2 tbsp. water to marshmallows & melt in the microwave for about 30 seconds – they will puff up then come down – then stir. If they haven’t melted enough, repeat until smooth. Then melt the chocolate for 2 minutes and stir until smooth. Spread the marshmallow onto the flat side of a cookie, then chocolate. Grab one more cookie and make a sandwich. It’s not “heart” at all! Ha!
An elegant take on a campfire favorite.
