Dessert Oscar Menu 2013: Lime of Pie

We just can’t get over our Lime of Pie, the dish we’re making for Life of Pi.

Ingredients: 2 cups Bisquick®*, 1/3 cup cream cheese, 1 tbsp. soft butter, 2 tbsp. sugar, 28 oz. sweet condensed milk, 1 lime – 3/4 cup lime juice & lime zest, 1/2 cup sour cream

Directions: Preheat oven to 350°. In a bowl, add Bisquick®, cream cheese, butter, and sugar – mix until it forms a dough. To firm a bit more, put in plastic wrap and refrigerate for about 30 minutes. Remove and roll out. Roll into tart pan (you can use regular pie tin or press into spring form pan). Form to the pan & using a fork, pop a few air holes before putting in the oven for about 6-8 minutes. You’ll add the filling to the crust before putting back into the oven. Side note: if you don’t have time to make a crust, feel free to use a pre-made crust.

In a large bowl, add sweet condensed milk, lime juice, sour cream, and about 3/4 of the lime zest and mix well before adding to the pie crust. Put it back into the oven for about 6-8 minutes more until the center starts to show “pin bubbles”. Take out and cool. Remove from pan (depending on the pie pan you chose). Sprinkle the remaining lime zest over the top and it’s ready to serve!

* Note: After posting this recipe, I eliminated using processed items like Bisquick® and tweaked the recipe before publishing KitchAnnette Red Carpet Menus. Here’s the update: Make the crust using 1/2 cup butter, 1/3 cup sugar, 1/4 tsp vanilla, and 1 cup flour – cream butter, sugar, and vanilla, then mix in flour – spread out in the pan – no pre-cooling or pre-baking. Follow directions above for the lime mixture and add to crust. Bake at 450° for 8-10 minutes then lower oven to 400° for another 6-8 minutes, or until you get the pin bubbles in the center. Remove, cool, sprinkle with lime zest, and enjoy!  

It’s the perfect compliment to a movie with many sweet and tart moments.
