The Brie of Life & HUGOat Cheese Salad
When preparing any meal with several components, it’s really smart to have a couple of them be “no brainers”.
For Oscar’s tomorrow, we are having two “no brainers” that I want to share with you.
Our “The Brie of Life” Appetizer: Take a round of Brie cheese or a wedge (or three – haha) and spread apricot jam liberally over the top. Sprinkle with a layer of sliced almonds and add fresh ground black pepper. Put in a 300° oven for about 15 minutes or until the Brie is soft and gooey. Put on a plate with a variety of crackers and crusty bread and you are done!
Creating our HUGOat Cheese Salad is a cinch too. Using romaine lettuce, radicchio, and endive – wash & break up into a large bowl. Add a “heavy” sprinkling of dried cranberries and walnuts. Season with salt & pepper. Toss with any raspberry vinaigrette (we said this is a quickie so just buy it). Then add a GENEROUS amount of goat cheese. We like to break it up into large chunks. We don’t mix it in because it tends to melt which is still good but not the texture we like.
