Rapture? Nope! Egg on The Face!

Well the word was out – the world would end from what… 5:00p-6:00p EST yesterday. And we’re still here. Surprise, surprise.

I really can’t stand that there are people who promote such drivel because of the people who will buy into it and have undue stress or even do serious damage to their lives! Ugh.

However, there is a better way to look at it if every ending is a beginning. Happy New World!!!! Today is the first day of the best world you can create. When you have the choice to be nasty or nice, choose nice and it’s a whole new world! Haha!

Whatever way you look at it, I have the perfect brunch dish to fit the feeling. It’s either Egg on Your Face or New World Eggy Muffin (egg as symbol of rebirth). Your choice. Either way, it’s easy and delicious.

Ingredients: 2 pcs. bread, about 1 oz. cheese, 2 eggs, salt & pepper (the specifics of these items are all up to you).

I took a light multi-grain Thomas’ English Muffin and toasted lightly while I immersed 2 large eggs (poked a hole in one end of each) in a pot of water on high heat. When the water got to a boil, I lowered the heat to simmer and timed it for 3 minutes. When the toaster went “ding”, I piled on about an ounce of shredded reduced fat Mexican mix cheese on each half of the muffin and put it back in for another round of light toasting to melt that cheese. The egg timer went off and I immediately poured out the hot water and ran them under cold. Got the cheesy muffins onto a plate ready to receive the soft eggy flesh. Out of the water came each egg, with the back of a spoon I cracked off the end and spooned out the contents onto the muffin. Salt & pepper to taste and voila!
