Fully Maron-ated! Sweetly Angry Kale & Bacon!
It’s so much fun when you get the opportunity to see an entertainer you like live. Thursday night I finally got to see Marc Maron perform when he kicked off the NY area leg of his Maronation tour at the Capitol Theater in Port Chester, NY and he did not disappoint. In fact he blew my expectations away!
I admit it, he was off my radar entirely until a couple of years ago when his excellent show “Maron” hit the IFC channel. But who was this dude and why did he have a self-titled show? Shame on me because he is a big deal. He hosts the #1 podcast called “WTF with Marc Maron” and has been working as a comic and radio host for years. I started listening and I was hooked. This past week he had President Obama to the garage (literally, his garage at his home) for an hour-long chat. It was great. Getting to see him right after that interview aired was FABULOUS!
In honor of Marc Maron and his Maronation tour, I present Sweetly Angry Kale & Bacon.
- 8 slices bacon
- 2 tbsp. honey
- 1/2 tsp. cayenne pepper
- 3 cups chopped kale
- 4 cloves diced garlic
- 2 tbsp. extra virgin olive oil
- salt & pepper to taste
Preheat oven to 400°. Combine honey and cayenne pepper in a bowl and coat bacon slices. Place flat on a pan and bake for 20 minutes. While the bacon cooks, heat a sauté pan and add olive oil. Brown garlic then add kale with salt and pepper to taste. Cook until the kale shrinks down, about 5 minutes. When the bacon is done, crumble and mix with kale. Serve!
It’s sweet, savory, spicy, and good for you – just like Maron! Ha!
