It’s the 2019 Red Carpet Menu for Oscar®! For BlackkKlansman it’s BlackkKluxsman.

This movie… dare I say it’s Spike Lee’s best movie ever? I dare! I knew the story of Ron Stallworth before the movie came out and it was wild. This man still carries his KKK card signed by David Duke. Insane! The way the movie unfolds really captures the true story beautifully. It’s odd to be so exuberant over a movie that is about such a heinous group, especially in the times we’re in, but it’s really great.

It’s time for the main course! And it was not an easy dish to devise. My friend Barbara makes another appearance in the creating of this menu… only for this one, she just threw out the dish – blackened chicken… bam! Perfect!!! But what to call it… hmmm…. Black… something… and then I thought “BlackkKlucksman” – cluck for the chicken. OK – excellent. When I was talking about it with my friend Joe Becwar, he heard it as “Klux” – a play-on-words for the KKK and I loved it! It works. And then I thought of the dish itself… chicken was exactly right… those horrible people who throw a sheet on their head in anonymity instead of showing themselves and their hate are cowards… or “chickens” and pretty black of heart.

Yeah… that got heavy… so let’s just talk food! I’d only had blackened fish once before and found it waaaaay too spicy and burnt tasting. Picking this dish meant figuring out a spice mix that has a great spice flavor and doesn’t kill the meat, but instead rises it up. I’ve achieved my goal – this mix is fabulous. Simple ingredients that are in the average cupboard. A few minutes on the stove and in the oven it goes! That’s the best! Hardly any work to have a delicious meal.

It’s not very pretty, but it’s really good. Paired with dishes like the upcoming side dishes in this menu… it soars! Get on it! Woo hoo!

Blackened Chicken

  • 1 tbsp paprika
  • 1 tbsp dried thyme
  • 2 tsp dried oregano
  • 1/2 tsp cayenne pepper
  • 2 tsp black pepper
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tsp salt
  • 4 chicken breasts, boneless and skinless
  • 1/2 cup butter, melted


  • In a small bowl, whisk together paprika, thyme, oregano, cayenne, black pepper, onion powder, garlic powder, and salt. Set aside.
  • Fully brush chicken breasts with butter then sprinkle spice mix on both sides, patting it in to secure the spice coating.
  • Using a large skillet on medium high heat, add chicken breasts. Cook for 5 minutes, turn, and cook for another 5 minutes.
  • Place skillet in a 375° oven for 30 minutes. The chicken is done when the internal temperature reaches 165°. Remove from oven and place chicken on a cutting board to rest for 5 minutes before slicing and serving.
