Cheesy Cheer

Tonight was the first ever Mom’s Night Out at Club Mom in Huntington, LI, NY (www.clubmomli.com). To celebrate the start of this weekly event, Joe and I sent over a little snackie…

I like cheesy sticks but wanted a smaller breadier “pop” so I came up with this little winner! You can make them in just a few minutes. They are perfectly paired with soup, stew, or a salad. They’re delightful with butter, sour cream, hummus, or your favorite savory spread. Of course you can just enjoy them as they are!

Experiment with the recipe – make it your own. I used 2% milk and reduced fat cheese – they don’t have to break the calorie bank! And definitely season to your tastes. This basic “simple ingredients” biscuit can go in any direction – sweet or savory. You can also make them bigger full-out biscuits.

Cheesy Chive Biscuit Bites

Ingredients: 1-1/2 cup flour, 1 tsp. baking powder, 2 tbsp. butter, 1 egg, 1/4 cup milk, 3/4 + 1/4 cup shredded sharp cheddar cheese (or cheese of your choice), 1/2 tsp. chives (I used dried but you can use fresh), 1 tbsp. water, 1 tsp. salt, 1/2 tsp. black pepper

Combine ingredients (hold back 1/4 cup shredded cheese) in a mixer until it forms a dough. On a baking sheet, pinch off a 1” piece and place the dough as you would cookies. Top with the remaining shredded cheese. Bake at 425° for 6-9 minutes, until edges get golden. Serve warm or at room temperature. Makes about 40 bites.

    i am thrilled to see that KITCHANNETTE has so much going on in 2011… it is well-deserved… i have to admit, i was confused by KITCHANNETTE for a while, i thought it was a restaurant… now i have come to realize that is is a “state of mind”… and that REALLY works… annette (joe too!) present various recipes and hosting ideas in a dynamic style!!! the energy is infectious and it makes unskilled chefs (like myself) want to give cooking a whirl… thanks guys!!! i look forward to reading future posts!!!
