Raise a Glass to the Golden Globes with Champagne Chicken!
It’s a brand new year and Award Season has begun!!!! The 75th Golden Globes will kick it off and what better way to celebrate it than with a bit of bubbly… but no one said it had to be confined to your glass!
Champagne Chicken is a dish that has a lot of meaning for me. When I was growing up in the Bronx, we often went to Manhattan for dinner at gorgeous restaurants. One we frequented regularly was called Divino’s. It was on Second Avenue and had to most delicious food.
I don’t know how I didn’t become a little chubby ball because what I ate was always the same – and note I was about 8 – 12 years old at the time! Where’d I put it all??!! Drat the adult metabolism. Ha!
Appetizer of melon and prosciutto followed by a half order of Fettuccine Alfredo, then… yes, you guessed it, CHAMPAGNE CHICKEN! Oh yeah, then fresh berries for dessert. When we got to the car, my sisters and I always bemoaned how full we were yet we always repeated our overeating. And did I mention we were permitted to order white wine spritzers? This was the ’70’s and as long as parents were OK with it, they would give a little wine to a kid. Ha!
Divino’s has been closed a few years but my father helped me do a good job at capturing this delightful dish. It’s glamorous and easy to prepare, two of my favorite things in the kitchen. Basic ingredients, a little bubbly, and if you want to jazz it up a bit more, sprinkle the plated dish with EDIBLE gold glitter/dust!
What could be more elegant and perfect for the Golden Globes! This year Seth Meyers is hosting. It’s going to be a challenge to dance around all the topical issues in a comedic way, but he’s more than up to the task and will do a fabulous job.
I’ve been doing a good job seeing many of the movies and shows nominated, especially with the Oscar nominations being announced on January 23rd.

Raise a Glass to the Golden Globes with Champagne Chicken!
Ingredients
- • 4 chicken cutlets
- • 1 cup coconut or all-purpose flour
- • 2 large eggs lightly beaten
- • 1 cup canola oil
- • 2 tbsp butter
- • 1/2 cup champagne
- • 1/4 cup chicken broth
- • 2 tbsp heavy cream
- • salt & pepper to taste
- • 16-20 white seedless grapes halved
- • 1 tsp gold edible glitter optional
Instructions
- Lightly dredge chicken in flour then egg.
- Over medium heat, add oil to a skillet. When it’s warm, add the chicken and sauté until lightly brown. Remove from the pan, drain excess oil, and place back in the pan.
- Add butter and champagne, and cook for about 5 minutes.
- Add chicken broth, grapes, salt and pepper.
- After another 5 minutes, add the cream and let simmer for 5 minutes more.
- Plate and sprinkle on the glitter.
Notes
Coconut Flour is a wonderful alternative to regular flour for a gluten-free and/or keto-friendly dish! Delish!
