Bourbon Marinated Flank Steak

The Purée:

  • 1/4 cup bourbon
  • 1/4 cup olive oil
  • 3 tbsp whole grain mustard
  • 1 tbsp Worcestershire sauce
  • 1 garlic clove, minced
  • 2 tsp coarse salt
  • 1 tsp freshly ground black pepper
  • 1-1/2 - 2 lb flank steak, trimmed, room temperature


  • Whisk bourbon, oil, mustard, Worcestershire sauce, garlic, salt, and pepper in ziplock bag.
  • Add meat and coat well. Refrigerate for at least 4 hours, up to 24 hours. Discard marinade. Let meat come to room temperature.
  • Set oven rack to about 5-6" from the heat and turn broiler on high. Preheat foil-covered broiler pan for 5 minutes before adding the meat. Broil for 3-4 minutes, then turn and cook an additional 4-5 minutes for medium.
  • Remove from oven, cover, and let rest about 10 minutes before slicing into thin strips against the grain. Serve.
