Yes FORTY! 40 Cloves Garlic Chicken!

• 3 tbsp butter
• 2 tbsp olive oil
• 3 lbs chicken
• 40 cloves garlic
• 3 tbsp fresh lemon juice
• salt & pepper to taste
• 1 sprig + 1 tsp minced fresh parsley
Add butter and oil to an oven-safe pot. Melt butter with oil then add the chicken. Sear on all sides.
Mix in all the garlic cloves. Add lemon juice, salt & pepper. Top with parsley sprig.
Bake at 350° for about 90 minutes. Garnish with minced parsley.
A great variation is to add about 2 cups of chicken broth and serve with your favorite pasta.
