Roasted Royal Purple Cauliflower with Garlic & Thyme

Ingredients
  

  • 1 head purple cauliflower cut into florets
  • 2 tbsp olive oil
  • 1 tbsp fresh thyme minced
  • 4 cloves garlic peeled and chopped
  • salt & pepper to taste

Instructions

  • In a large bowl, combine oil, thyme, and garlic. Add florets and mix to coat well.
  • Spread florets and garlic in one layer on a parchment-lined baking pan. Bake at 400° for 10 minutes. Remove them from the oven, turn them, and bake for an additional 10 minutes or until they are golden. Serve immediately.
