Raise a Glass to the Golden Globes with Champagne Chicken!

Ingredients
• 4 chicken cutlets
• 1 cup coconut or all-purpose flour
• 2 large eggslightly beaten
• 1 cup canola oil
• 2 tbsp butter
• 1/2 cup champagne
• 1/4 cup chicken broth
• 2 tbsp heavy cream
• salt & pepper to taste
• 16-20 white seedless grapeshalved
• 1 tsp gold edible glitteroptional
Instructions
Lightly dredge chicken in flour then egg.
Over medium heat, add oil to a skillet. When it’s warm, add the chicken and sauté until lightly brown. Remove from the pan, drain excess oil, and place back in the pan.
Add butter and champagne, and cook for about 5 minutes.
Add chicken broth, grapes, salt and pepper.
After another 5 minutes, add the cream and let simmer for 5 minutes more.
Plate and sprinkle on the glitter.
Notes
Coconut Flour is a wonderful alternative to regular flour for a gluten-free and/or keto-friendly dish! Delish!
