A Fête of Feta! Greek Potato Salad!

Ingredients
  

  • • 2.5 lbs red potatoes washed & cubed
  • • 1/2 red onion diced
  • • 2 tbsp fresh parsley minced
  • • salt to taste
  • • pepper to taste
  • • 1/4 cup extra virgin olive oil
  • • 1/4 cup fresh lemon juice
  • • 1/2 cup feta cheese crumbled

Instructions

  • Add the potatoes and some salt to a pot of water. Bring to a boil, lower to medium heat, and cook for about 10-15 minutes or until tender. Drain and cool to room temperature.
  • Place potatoes in a bowl. Add onion, parsley, salt, pepper, oil, and lemon juice. Toss until well coated.
  • Sprinkle with feta cheese and serve.
