As you read this, I am back at Rancho La Puerta basking in the joy of that special place. You’ll recall last year’s creamy Electrolyte Smoothie and Ranch Special Sweet Coffee, no doubt. But the weather in NY has been beautiful! I recently spent a really fun day at the beach and was thirsty for a delicious cocktail when I got home. I remembered having a drink about 3 years ago that was “haunting” me… I had to make a version!

It was summer in Southampton, Long Island. My friends were getting married and we were staying at a nearby inn enjoying a pre-ceremony cocktail and had an amazing concoction. We ordered round 2 and I paid attention to how the bartender made it.

I don’t think I have it exactly like that, and I decided to slush it up instead of just have it on the rocks, but you are going to crave it when you want a yummy adult beverage!

I LOVE watermelon! Sweet but not too sweet, the flavor screams HELLO SUMMER! Using it in this drink recipe is perfection. It’s simple to make and will turn a ho-hum summer soire into a real PAR-TAY!

Slushy Sweet Watermelon Mint Cocktail!

Servings 4

Ingredients
  

  • • 4 cups watermelon
  • • 4 oz fresh lime juice
  • • 4 oz simple syrup
  • • 4 oz triple sec
  • • 4 oz vodka
  • • 6-8 fresh mint leaves
  • • 4 cups ice

Instructions

  • Combine ingredients in a blender.
  • Blend until smooth.

Notes

To make simple syrup, add equal parts sugar and water to a pot and heat while stirring until sugar dissolves.
