I love TV. Always have and always will. There was a long stretch where admitting it relegated you to “couch potato” status, but television has now become so elevated. The advent of Netflix, Hulu, Amazon Video, etc. has rendered regular episodic TV with regulated seasons and time frames a thing of the past for the most part. The quality of shows, topics, and full-blown opportunities for the entertainment industry has made watching TV as a verifiable past-time much more high-brow than ever before.

Tonight is the celebration of all things TV – the Emmy® Awards! I usually go all out for the Oscars®, but I didn’t want to ignore tonight’s festivities and thought the perfect dish would be a version of a TV dinner but elevated and homemade.

And what TV dinner is more iconic than meatloaf with potatoes and carrots! The only meatloaf I’ve ever had, growing up in the Bronx in an Italian-American family is my Italian-style one. I wanted a true American version so I called on my favorite collaborator, Joe Becwar. He grew up in America’s heartland  – Wisconsin – where meatloaf is made the American way so I called on him to share his mom’s recipe.

That’s one easy recipe and SO GOOD! The side of potatoes and carrots is such a great compliment to the meatloaf with it’s tang of tomato topping. My eternal thanks to Joe for hopping to my crazy demands to “make that meatloaf for me now” as if he doesn’t have enough to do with his uber-successful real estate career, handsome husband, and amazing sons.

Emmy-azing TV Dinner! Meatloaf with Potatoes & Carrots!

Servings 8

Ingredients
  

  • • 2 lbs ground beef
  • • 1 large egg
  • • 1 cup plain bread crumbs
  • • 1 medium onion diced
  • • 1-1/4 cups ketchup
  • • 1 tsp garlic powder
  • • salt & pepper to taste
  • • 2 lbs red potatoes halved
  • • 1-1/2 cups baby carrots
  • • 2 tbsp olive oil

Instructions

  • Mix meat, egg, bread crumbs, onions, 1 cup ketchup, salt, pepper, and garlic powder.
  • Place in a baking pan and form into a loaf.
  • Top with remaining ketchup. Set aside.
  • Toss potatoes, carrots, salt, & pepper with olive oil.
  • Surround loaf with vegetables and bake at 350° for 45-55 minutes.
